Ingredients
- 1 large brown onion, diced
- 3 carrots, chopped
- 1 tablespoon vegetable oil
- 4 cloves garlic
- 2 teaspoons ginger
- 1 tablespoon medium curry powder
- 1 tablespoon plain flour
- 500ml chicken stock
- 2 tablespoons soy sauce
- Salt and black pepper to taste
Instructions
- Preheat a saucepan over medium heat with a little oil.
- Add the onions to the pan and cook until softened, about 5 minutes.
- Add the carrots and cook for another 5 minutes.
- Add the garlic and ginger, cooking for 1-2 minutes until fragrant.
- Stir in the curry powder and flour, cooking for 1 minute.
- Gradually add the chicken stock, stirring to combine.
- Add the soy sauce, salt, and pepper, bringing the mixture to a simmer.
- Cook for 15-20 minutes until the sauce has thickened.
- Once thickened blend the sauce until smooth using a hand blender
- Serve with rice and breaded chicken breasts

- The sauce can be made in advance and stored in the fridge for up to 3 days
