Katsu curry sauce

Ingredients

  • 1 large brown onion, diced
  • 3 carrots, chopped
  • 1 tablespoon vegetable oil
  • 4 cloves garlic
  • 2 teaspoons ginger
  • 1 tablespoon medium curry powder
  • 1 tablespoon plain flour
  • 500ml chicken stock
  • 2 tablespoons soy sauce
  • Salt and black pepper to taste

Instructions

  1. Preheat a saucepan over medium heat with a little oil.
  2. Add the onions to the pan and cook until softened, about 5 minutes.
  3. Add the carrots and cook for another 5 minutes.
  4. Add the garlic and ginger, cooking for 1-2 minutes until fragrant.
  5. Stir in the curry powder and flour, cooking for 1 minute.
  6. Gradually add the chicken stock, stirring to combine.
  7. Add the soy sauce, salt, and pepper, bringing the mixture to a simmer.
  8. Cook for 15-20 minutes until the sauce has thickened.
  9. Once thickened blend the sauce until smooth using a hand blender
  10. Serve with rice and breaded chicken breasts

Tips

  • The sauce can be made in advance and stored in the fridge for up to 3 days
