Ingredients
For the Beef
- 500g beef mince (5% fat recommended)
- 1 small onion, finely grated
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- ½ tsp chilli flakes (optional)
- 1 tsp dried oregano
- 2 tbsp fresh parsley, finely chopped
- 1 tsp salt
- ½ tsp black pepper
For the Tzatziki
- 150g Greek yogurt
- ½ cucumber, grated and excess water squeezed out
- 1 clove garlic, finely grated
- 1 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 tbsp fresh dill or mint, finely chopped (optional)
- Salt, to taste
- Black pepper, to taste
For the Flatbreads
- 250g plain flour, plus extra for dusting
- 150g Greek yogurt
- 1½ tsp baking powder
- ½ tsp salt
- 1 tbsp olive oil (optional)
To Serve
- Shredded lettuce
- 2 tomatoes, diced or sliced
- ½ red onion, thinly sliced
- Lemon wedges
Instructions
Make the Tzatziki
- Grate the cucumber and squeeze out as much liquid as possible.
- Mix the Greek yogurt, cucumber, garlic, olive oil, lemon juice, herbs, salt and pepper until combined.
- Chill in the fridge until ready to serve.
Make the Flatbreads
- Mix the flour, baking powder and salt in a large bowl.
- Add the Greek yogurt and olive oil.
- Knead until a smooth dough forms.
- Rest the dough for 15–20 minutes under a clean tea towel.
- Divide the dough into four equal pieces.
- Roll each piece into a circle approximately 20–22cm wide.
- Heat a dry non-stick frying pan over medium-high heat.
- Cook each flatbread for 1–2 minutes per side until puffed and lightly charred.
- Keep the cooked flatbreads covered with a clean tea towel.
Prepare the Beef
- Combine all of the beef ingredients in a large bowl until just mixed.
- Divide the mixture into four equal portions.
Cook the Beef Flatbreads
- Spread one portion of the raw beef mixture evenly over one side of a cooked flatbread.
- Heat a large non-stick frying pan over medium heat.
- Place the flatbread into the pan with the beef side facing down.
- Cook for 4–5 minutes until the beef is browned and cooked through.
- Flip the flatbread and cook for 30–60 seconds to warm the bread.
Assemble
- Spread tzatziki over the cooked beef.
- Top with lettuce, tomato and red onion.
- Finish with a squeeze of lemon.
- Fold the flatbread in half and serve immediately.
Storage
- Fridge: Store cooked beef flatbreads and tzatziki separately in airtight containers for up to 3 days.
- Freezer: Freeze the cooked beef flatbreads for up to 3 months. Defrost overnight in the fridge and reheat in a frying pan or oven at 180°C / 160°C fan until hot. Tzatziki is not suitable for freezing.
