Equipment

- Medium saucepan
- Wooden spoon

Ingredients
- 500g minced pork or beef
- 300g dried pasta (spirali or similar)
- 500g passata
- 300ml beef stock
- 1 onion, diced
- 3 carrots, diced
- 2 tbsp tomato purée
- 1 tbsp Worcestershire sauce
- 100g reduced-fat cheese, grated
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp chilli powder
- 1 tsp garlic powder
- Salt, to taste
- Black pepper, to taste
Instructions
- Dice the onion and carrots.
- Heat the olive oil in a large saucepan over a medium heat.
- Fry the onion until lightly browned.
- Add the carrots and cook for 3 minutes.
- Add the minced meat and cook until browned.
- Add the paprika, chilli powder, garlic powder, salt, and black pepper.
- Cook the spices for 1 minute until aromatic.
- Stir in the tomato purée.
- Cook the tomato purée for 2 minutes.
- Add the passata, beef stock, and Worcestershire sauce.
- Stir well and scrape any browned bits from the bottom of the pan.
- Simmer the sauce on a low heat for 20 minutes.
- Boil the pasta in a separate saucepan according to the packet instructions.
- Drain the pasta.
- Add the cooked pasta to the sauce.
- Stir until the pasta is evenly coated.
- Add the grated cheese.
- Stir until the cheese has melted into the sauce.
- Divide into meal prep containers or serve immediately.
Storage
- Fridge: 4 days in an airtight container.
- Freezer: 3 months. Thaw overnight in the fridge and reheat until piping hot.
