Ingredients
- 6 tomatoes
- 1 red bell pepper
- 1 red onion
- 4 cloves garlic
- 30g vegetable oil
- 300g basmati rice (dry weight)
- 1 teaspoon paprika
- 1 teaspoon thyme
- 1/4 teaspoon nutmeg
- 450ml vegetable stock
Instructions
- Blend the tomatoes, red bell pepper, red onion, and garlic into a smooth paste.
- Heat the vegetable oil in a large pot over medium heat.
- Add the blended tomato mixture and cook covering with a lid for 10-15 minutes until reduced.
- Add the paprika, thyme, nutmeg, and salt to taste, stirring well.
- Add the basmati rice and stir to coat in the sauce.
- Pour in the vegetable stock and turn heat to low.
- Cover the pot and simmer for 20 minutes, stirring regularly until the rice is cooked and the liquid is absorbed.
- Serve immediately while hot.
Tips
- A food processor works best for blending the tomatoes and peppers
- Keep a watchful eye on the rice to prevent sticking and burning
- Serve with chicken, fish, or vegetables for a complete meal
